I also want meals that actually help me feel good, give me steady energy, and don’t leave me bloated or sluggish the rest of the day.
These are the cozy meals I keep coming back to. They’re simple, filling, and support healthy digestion and steady energy — which is basically the dream during winter and the holidays.
You can make these even with a baby on your hip.
Cozy Chicken & Veggie Soup (Fast + Nourishing)
This soup is warm, simple, and packed with protein.
I love it because you can throw everything in one pot and let it do its thing.
What you need:
Shredded rotisserie chicken
Chopped carrots, celery, onion
Bone broth
Garlic, salt, pepper
Spinach or kale
Optional: quinoa or rice
How to make it:
Sauté your veggies for a few minutes, add broth and chicken, then simmer until everything is soft. Toss in the greens at the end. Done.

Simple Turkey Chili (One-Pot!)

What you need:
Chicken thighs or breasts
Any veggies you have
Olive oil
Garlic powder, paprika, salt, pepper
How to make it:
Toss everything on a sheet pan, season it, and bake at 400°F for about 25 minutes.

Minimal dishes, minimal thinking, maximum flavor.
Tortellini Soup
One pot, cozy, yummy, goodness
What you need:
- Turkey Italian Sausage
- Can of Crushed Tomatoes
- Fresh or Frozen Tortellini
- Yellow Onion
- Chicken Bone Broth (for added protein)
- Salt & Pepper
- Heavy cream & Parmesan (optional)
In a large pot, brown the sausage, then add the onions until fragrant. Add the crushed tomatoes, bone broth and salt and pepper, bring to a boil, then add tortellini, simmer until fully cooked. Can add heavy cream to make it creamier if desired and top with parmesan cheese.
Mom Hacks for Eating Healthy in Winter

Keep ingredients for one go-to meal always stocked
Prep veggies once and use them all week
Add protein to at least two meals a day
Swap one comfort meal for a balanced option
Try to get 10 minutes of movement before dinner (really helps digestion)
